These were a total experiment, but turned out good.
INGREDIENTS
1 TIN KIDNEY BEANS (DRAINED)
6 SPRING ONIONS CHOPPED (AND LIGHTLY FRIED IN 1 CAL SPRAY)
1 SWEET POTATO
I PACKET READY TO EAT PUY LENTILS
1 TEASPOON MUSTARD
I DESSERT SPOON JERK SEASONING
FRY-LITE 1 CAL SPRAY TO COOK
Mash up the kidney beans. Stir in Jerk seasoning, mustard and lentils. Meanwhile cook sweet potato in microwave. Stir in lightly fried spring onions and the sweet potato scooped out of its skin. When mixed thoroughly,divide into six portions and form each portion into a patty. Fry for a few minutes on each side in fry-lite. 1 Burger = 137.5kcal
P.S. The photo shows only 5 burgers - there were 6.....I ate one ;)

The Journey Begins - Start Weight 18st 2.2lbs. Weight today 16st 13.2lbs
On the 8th of February I stepped onto the scales and discovered I was the heaviest I had ever been. I'm 5'10'' tall and I weighed in at 18st 2.2lbs. I'd been suffering from various aches, pains and swollen ankles, and tiredness. I had been suffering from depression and had recently come off my anti-depressants (Sertraline) and completed a course of Cognitive Behavioral Therapy. Finally I felt like I was in a position to tackle the weight that had crept on over the past few years. So I made the decision to start eating healthily (something I have never really done) and watch the fat content of the food I ate, plus I have done my utmost to cut out wheat and dairy.
For Valentine's Day, my husband bought me a Fitbit which has been a totally amazing help. I now watch my calorie intake as well as the fat content of what I eat, and it helps me log what I've taken in versus what I have burned. I am aiming to keep my intake under 1000kcal and so far that's been ok.
As far as exercise goes, I had recently taken on the morning dog walk as my husband had started working longer hours, so that was helping. I have since started joining him on the evening dog walk as well.
So, what do I eat? Well, I've upped my veg intake - in fact it makes up the bulk of my diet. I include some lean meat - mainly turkey breast meat, Soya yoghurts (especially vanilla Alpro) have become a favourite, and I seem to have developed an addiction to bananas (I never really ate fruit previously). Soup is a good lunch option, rice, gluten free pasta (in moderation), and plenty of quorn.
So is it working??
YES!!
In the 12 days since I started I have lost a whopping 1st 3lbs
